Inside Out Spicy Peanut Baked Chicken Recipe
Spicy Peanut Bake flavors these tender chicken thighs. The shallot pan-sauce makes them extra moist. Irresistible!

Ingredients
  • 4 boneless, skinless chicken thighs
  • 1-3.5 oz box Spicy Peanut Bake, both inner envelopes
  • 1 tablespoon canola oil
  • 2 shallots, minced
  • 1 cup chicken broth
  • Garnish: lime wedges, chopped cilantro
Directions
1. Preheat oven to 350°F.
2. Pound chicken to an even thickness between wax paper.
3. Coat both sides of chicken with Spicy Peanut Bake. Roll up and secure with a toothpick.
4. In a medium nonstick skillet, heat oil. Brown chicken rolls well on all sides. Place in a size appropriate baking dish.
5. Add chicken broth and shallots to the skillet. Bring to a boil, scraping up the browned bits in the pan. Simmer for 4 minutes or until slightly thickened.
6. Pour over chicken and bake for 30 minutes or until done.
7. Garnish with lime wedges and chopped cilantro.
