Broccoli Raab and Garlic Basil Coconut Rice

  • 1-6.7 oz box Garlic Basil Coconut Rice
  • 3 tablespoons olive oil
  • 1 red bell pepper, julienned
  • 1/2 red onion chopped
  • 2 tablespoons chopped garlic
  • 1 bunch broccoli raab, rinsed, stems cut off
  • 6 plum tomatoes, quartered
  • 2 tablespoons Garlic Chili Pepper Sauce
  • Salt and pepper
  • 1/4 cup grated Romano cheese


  1. Prepare Garlic Basil Coconut Rice as directed on box. Set aside to keep warm.
  2. Heat oil in large skillet.
  3. Add red bell pepper, onion and garlic. Stir fry until peppers begin to soften, about 2 minutes.
  4. Add broccoli raab and tomatoes. Stir fry until tomatoes begin to soften, about 2 - 3 minutes.
  5. Stir in Garlic Chili Pepper Sauce. Salt and pepper to taste.
  6. Place Garlic Basil Rice on platter.
  7. Arrange broccoli raab mixture over top.
  8. Sprinkle with Romano cheese. Serve warm.
