Chili Pepper Lemon Lentils

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, sliced thin
  • 6 cloves garlic
  • 1 cup uncooked lentils, rinsed
  • 2 cups water
  • Juice of 1/2 lemon
  • 1/4 cup Garlic Chili Pepper Sauce
  • 2-14 oz cans vegetable broth
  • Salt and pepper
  • Optional garnish: chopped parsley or cilantro
  • *use one can broth for a dryer lentil and 2 cans for a soup-like lentil entrée

Directions

  1. In skillet, heat olive oil over medium heat.
  2. Sauté onion and garlic until tender, about 5 minutes.
  3. Add lentils, water, lemon juice and Garlic Chili Pepper Sauce.
  4. Cook over medium low heat, adding vegetable broth as needed until lentils are tender, about 30 minutes.
  5. Salt and pepper to taste. Serve with chopped parsley or cilantro to garnish.
