Coconut Ginger Noodles Quick Meal with Tofu

Customize your Quick Meal by adding a bit of tofu and scallions. It’s a great vegan snack. See side of box for additional suggestions, variations are limitless.

Ingredients

  • 1-4 oz box Coconut Ginger Noodles Quick Meal
  • 1/2 cup chopped extra firm tofu, cooked or plain
  • 2-3 tablespoons chopped scallions

Directions

  1. Microwave Directions:
  2. Microwave according to box instructions. Stir in tofu and scallions at the end of step three.
  3. Microwave for one minute more. Close carton, let rest 1 minute. Serve immediately.
  4. Stove-Top Directions:
  5. Add 1 cup water (or to fill line on inside of box) to saucepan.
  6. Add content of all envelopes.
  7. While stirring, bring to a boil. Simmer 4 minutes. Just before noodles are done add tofu and scallions. Stir gently, serve when heated through and noodles are tender.
