Crock Pot Peanut Satay Chicken

A jar of Peanut Satay Sauce, cream cheese and lime will transform your chicken.  The best part is, it cooks while you’re doing something else.

Ingredients

  • 1 lb small red potatoes, halved
  • 1 cup chopped onion
  • 2 1/2-3 lbs boneless, skinless chicken thighs
  • Salt and pepper
  • 1/2-8 oz package (4 oz) cream cheese, room temperature (regular or 1/3 less fat)
  • 1-7 fl oz jar Peanut Satay Sauce
  • 3 tablespoons lime juice
  • Optional: Chopped peanuts and cilantro

Directions

  1. Fill bottom of crock pot with potatoes and layer with onions. Top onions with chicken. Salt and pepper to taste.
  2. Beat cheese and Peanut Satay Sauce in a medium bowl until combined. Add lime juice to empty jar and cover. Shake until sauce (left on jar sides) and lime juice are mixed. Pour into peanut satay mixture.
  3. Beat mixture until smooth and pour over chicken. Cover and cook on high for 5 hours. Serve with chopped peanuts and cilantro, if desired.
