Garlic Ginger Coconut Rice

This traditional Thai Jasmine Rice dish is made extra creamy with the addition of A Taste of Thai Coconut Milk.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1-2 tablespoons minced fresh ginger
  • 1 teaspoon salt
  • 2 cups Jasmine Rice, rinsed
  • 2 cups water
  • 1-13.5 oz can Coconut Milk
  • Garnish: chopped basil

Directions

  1. In saucepan over medium low heat, add oil, garlic, ginger and salt. Sauté until garlic is soft but not browned.
  2. Add Jasmine Rice and stir until well coated.
  3. Add water and Coconut Milk. Bring to a boil.
  4. Stir well. Cover and reduce heat to lowest setting. Cook for 15 minutes.
  5. Remove from heat. Let sit covered an additional 5 minutes. Garnish with basil and serve.
