Pad Thai BBQ Shrimp

Pad Thai Sauce takes on an Indian spice with the addition of garam masala in this rich barbecue sauce.

Ingredients

  • 2 tablespoons oil
  • 1/2 cup minced shallots
  • 1 tablespoon each of minced ginger and garlic
  • 1-3.25 oz box Pad Thai Sauce
  • 1/2 cup ketchup
  • 3 tablespoons white or rice vinegar
  • 1/4 cup molasses
  • 2 tablespoons dark brown sugar
  • 1 tablespoon Fish Sauce
  • 1-2 teaspoons garam masala
  • 1/4 -1/2 teaspoon ground cayenne
  • 2 lbs jumbo fresh shrimp (22-25 count), peeled and deveined

Directions

  1. Heat oil in medium saucepan. Add shallots, ginger and garlic. Stirring occasionally, cook until soft and fragrant.
  2. Add Pad Thai Sauce, ketchup, vinegar, molasses, brown sugar, Fish Sauce, garam masala and cayenne to saucepan. Bring to a boil and turn down to an active simmer. Stirring occasionally, cook until reduced to 1 1/2 cups.
  3. Preheat grill to medium -high heat. Thread shrimp and pat dry. Oil grill grates and place shrimp on grill. Generously brush shrimp with Pad Thai BBQ Sauce and cook 3-4 minutes. Turn shrimp and repeat. Cook until shrimp are just pink.
  4. Serve on a bed of lettuce or on Rice Noodles with Cilantro Pesto for an additional Thai treat.
