Thai people love eggs in any form (actually … who doesn’t) in omelets or custards, fried or scrambled. We made a healthy, mostly egg-white frittata (yes, we know that’s Italian) using favorite Thai flavors and Garlic Chili Pepper (Sriracha) Sauce to spice it up. It’s perfect for breakfast or a casual dinner!

Ingredients

  • 2 tablespoons oil
  • 1/2 cup diced shallots
  • 1 red pepper, diced (about 1 cup)
  • Salt
  • 4 oz of sliced ham, diced
  • 10 large egg whites plus 2 eggs
  • 3-4 tablespoons Garlic Chili Pepper (Sriracha) Sauce plus extra for garnish
  • 3 tablespoons roughly chopped basil leaves
  • 1/2 cup crumbled feta cheese
  • Optional: Fish Sauce

Directions

  1. Preheat oven on broil. Adjust top rung to be about 10 inches from broiler.
  2. Add oil to an oven proof 10-inch skillet (cast iron works well) over a medium-high heat. Add shallots, red pepper and salt to taste. Cook until starting to brown. Add ham and cook 1-2 minutes, stirring frequently.
  3. Meanwhile beat egg whites, eggs and Garlic Chili Pepper (Sriracha) Sauce until combined. Pour into skillet and turn heat to low. Cook, pulling eggs from the edges into the center until almost set. This enables the runny parts on top to flow beneath the set parts and make large curds that will keep the frittata fluffy.
  4. When almost set, gently press the top of the frittata to make an even thickness. Evenly sprinkle with basil leaves, then feta cheese. Place skillet in oven. Broil on top rung until frittata is firm all the way through. Serve with small bowls of Garlic Chili (Sriracha) Sauce and Fish Sauce, if desired.

Thais use Fish Sauce the way other cultures use soy sauce. Its savory and salty flavors are perfect for stir-frys, curries, marinades and dressings.
