Peanut Ginger Dressing

This yummy dressing carries a kick. Use it as a marinade as well as a dressing. It’s a great dressing on meats, pasta and greens.

Ingredients

  • 3/4 cup Coconut Milk*
  • 1 packet Peanut Salad Dressing Mix, both inner envelopes
  • 1/4 cup oil
  • 2 tablespoons Fish Sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon grated fresh ginger
  • *Remaining Coconut Milk can be frozen in an airtight, plastic container for up to 6 months.

Directions

  1. In a blender, combine Coconut Milk, Peanut Salad Dressing Mix, oil, Fish Sauce, vinegar, and ginger.
  2. Mix until well combined. Chill and serve.
