Ingredients

  • 6 slices thick cut bacon
  • 1/2 cup minced shallots
  • 1-14 oz can artichokes, drained and chopped
  • 1-8 oz package of Neufchatel cream cheese
  • 1-8 oz package grated 6 cheese Italian blend, divided
  • 1/2 cup mayonnaise
  • 1/4 cup Garlic Chili Pepper Sauce
  • 1/2 cup chopped cilantro
  • For serving: sliced vegetables or crackers

  1. Preheat oven to 375°F. Grease pie plate. Fry bacon in a large skillet until crisp and drain on paper towels. Crumble or cut into small pieces and set aside.
  2. Drain all but one tablespoon of bacon grease from pan and add shallots. Sauté until lightly browned. Turn off heat and add chopped artichokes. Stir until mixed for added flavor.
  3. Beat Neufchatel, 1 cup of grated cheese, mayonnaise and Garlic Chili Pepper Sauce in a mixing bowl until smooth. Add artichoke mixture and 1/2 portion of chopped bacon. Mix until combined. Pour into pie plate or baking dish of choice. Sprinkle with remaining bacon and cover with remaining cup grated cheese.
  4. Bake 20-25 minutes or until slightly browned on edges. Remove from oven and sprinkle with cilantro. Serve with vegetables or crackers.
