Sweet Chili Turkey with Noodles

A Taste of Thai Sweet Chili Sauce combined with Fish Sauce give this dish a true Thai flavor. You can mix and match your vegetables.

Ingredients

  • 1/2-16 oz bag (8 oz) Rice Noodles, any size
  • 1 tablespoon oil
  • 1 1/4 lbs ground turkey
  • 1 bunch scallions, sliced into small rounds
  • 1 tablespoon Fish Sauce
  • 1/2 English cucumber, cut into thin half moons
  • 1 small head of radicchio, cut into thin strips
  • 1-7 oz bottle Sweet Chili Sauce
  • 1/4 cup finely chopped cilantro
  • 3 tablespoons fresh lime juice

Directions

  1. Put a large pot of salted water on to boil.
  2. In a large nonstick skillet, heat oil over a medium high heat.
  3. Add turkey, scallions and Fish Sauce. Stir-fry until the turkey is cooked through and broken up.
  4. Meanwhile, boil Rice Noodles according to bag directions. Noodles are done when they are firm yet tender. Drain noodles, rinsing quickly with lukewarm water.
  5. In a large bowl, combine turkey mixture, cucumber, radicchio, Sweet Chili Sauce, cilantro, lime juice and noodles.
  6. Mix well and serve.
