Thai Chicken Salad

This beautiful salad is a refreshing change from mayonnaise salads. Spicy Peanut Bake and Sweet Chili Sauce give it a unique Thai flavor.

Ingredients

  • 1/2-3.5 oz box Spicy Peanut Bake
  • 1/2 cup Sweet Chili Sauce
  • 1/4 cup rice vinegar
  • 3 cups shredded chicken breast*
  • 2 cups green cabbage, very thinly sliced
  • 2 carrots, julliened
  • 1 bunch scallions, chopped
  • 1 cup snow peas, sliced
  • 1/4 cup chopped mint
  • Optional: chopped peanuts
  • * Use one store-bought rotisserie chicken for fast and flavorful chicken breast. It equals approximately 3 cups chicken breast.

Directions

  1. Mix 1 inner envelope of Spicy Peanut Bake, Sweet Chili Sauce and vinegar until sugar (in Spicy Peanut Bake) is dissolved. Set aside.
  2. Add chicken breast, cabbage, carrots, scallions, snow peas, and mint to a large bowl.
  3. Pour reserved dressing into chicken mixture and toss until combined. Top with peanuts if desired and serve.

The chilies are mellow and sweet in this sauce, great as a dipping sauce by itself, or as a flavorful addition to sauces and marinades.
This Thai peanut coating will add just the right touch to your dinner! We love it with chicken, but it’s good with pork and fish too.
