Grilled Chicken and Broccoli Pizza

A Taste of Thai Garlic Chili Pepper Sauce mixed with Peanut Sauce Mix makes an extra spicy pizza. Double the Garlic Chili Pepper Sauce for a 10 alarm fire.

Ingredients

  • Olive oil
  • 1/4 cup Garlic Chili Pepper Sauce
  • 1/2-3.5 oz box Peanut Sauce Mix
  • 1/2 lb boneless, skinless chicken breast
  • 1-15 oz pizza dough, homemade or store-bought
  • 1 tablespoon minced garlic
  • 1 cup broccoli florets
  • 1/2 cup red onion, diced
  • 2 tablespoons cream sherry
  • 1 cup sharp cheese, grated

Directions

  1. Remove oven racks from oven, leaving bottom rack in. Preheat oven to 475°F. Lightly brush pizza pan with oil.
  2. Whisk Garlic Chili Pepper Sauce and 1 inner envelope Peanut Sauce Mix in a medium bowl. Marinate chicken in mixture for 30 minutes. Preheat grill.
  3. Grill chicken on both sides until almost done. Set aside marinade and chicken.
  4. Stretch or roll dough to desired size and thickness. Brush with oil. Spread marinade over pizza and season with minced garlic.
  5. Slice chicken into strips and arrange on pizza with broccoli and red onion. Drizzle with sherry and top with cheese.
  6. Bake until crust is golden and crisp, about 20-25 minutes.
