Pad Thai Salad with Chicken

Our Pad Thai for Two also makes a great salad with all the flavors of Thailand. It’s a perfect dish for leftover meats, poultry or seafood.
Ingredients
- 1-9 oz box Pad Thai for Two (includes Pad Thai Sauce and Rice Noodles)
- 2 tablespoons ketchup
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 2 cups favorite vegetables*
- 2 cups cooked chicken
- 1/2 cup peanuts crushed
- Optional: 1/4 cup chopped basil
- *We used chopped scallions and broccoli slaw
Directions
- Put a large pot of salted water on to boil.
- Meanwhile, whisk Pad Thai Sauce, ketchup, lime juice and brown sugar in a medium bowl until combined. Add vegetables, chicken and peanuts.
- Boil Noodles according to box directions and drain. Rinse quickly with cold water and add to bowl. Toss until all ingredients are combined.
- Sprinkle with basil, if desired, and serve at room temperature or chilled.
