Frozen or fresh raspberries combined with lime and coconut milk make for a sweet and tart ice pop that refreshes the palate.
Ingredients
- 1-13.5 oz can Coconut Milk
- 1-12 oz package frozen raspberries, thawed
- 1/2 cup sugar
- 2 tablespoons fresh lime juice
Directions
- Add Coconut Milk, raspberries, sugar and lime juice to blender. Blend until smooth. We did not strain out the seeds, but if desired use a fine sieve or food mill.
- Pour mixture into ice pop holders and insert popsicle sticks. Freeze 5 hours or overnight. We used rocket pops, which hold 3 ounces*.
