Thai tea is perfectly spiced and sweet! We combined coconut milk with sweetened condensed milk to top off this classic tea for an extra special treat!

Ingredients

  • 1-13.5 oz can Coconut Milk
  • 1/2 cup loose Chinese black tea leaves, we used Oolong
  • 4-6 star anise pods*, finely crushed
  • 1/4 inch slice of a naval orange
  • 1 vanilla bean**
  • 4 whole cloves
  • 1 cinnamon stick
  • 1 cup raw sugar (granulated will do but raw is more like palm sugar)
  • Optional: 3 or 4 drops red food coloring
  • 1-14 oz can sweetened condensed milk
  • *star anise is very fragrant and floral smelling. Beginners may want to start with 4 pods only. They are found in bulk, in most health food stores spice aisle, so you don't have to buy a whole bag that may never get used.
  • **Since this recipe does not open the bean and scrape out the seeds, this vanilla bean can be used again. Wash off and air dry then save in a glass jar or zip lock type bag.

Directions

  1. Place Coconut Milk can in the refrigerator upside down. Bring 2 quarts (8 cups) water to a boil. Add Chinese tea leaves, crushed star anise pods, orange slice, vanilla bean, clove and cinnamon stick. Stir well. Simmer for 5 minutes, stirring occasionally.
  2. Remove from the heat and stir in 1 cup sugar and a few drops of red food coloring, if desired. (Thai tea is orange colored when mixed with milk because of red dye. Adding food coloring is very traditional but not necessary to the flavor.) Cover and steep for 30 minutes. Strain into a pitcher. Refrigerate until cold.
  3. Carefully open can of cold coconut milk and pour off water part of separated coconut milk. Refrigerate coconut water for smoothies or use in soups. Scoop solid parts of coconut milk into a bowl. Add sweetened condensed milk and whisk together.
  4. Pour chilled Thai tea over glasses of ice. Top with a few tablespoons of coconut-condensed milk mixture. Stir together and enjoy!
