This is Thailand’s grilled street food at its best! Peanut Sauce Mix makes these tasty satays extra good!
Ingredients
- 1-3.5 oz box Peanut Sauce Mix
- 1-13.5 oz can Coconut Milk
- 1 tablespoon Fish Sauce
- 1 tablespoon fresh lime juice
- 2 lbs chicken breast, sliced thinly
- Optional: chopped cilantro and lime wedges
Directions
- Soak skewers in water for 1-2 hours before grilling.
- Mix Peanut Sauce Mix, Coconut Milk, Fish Sauce and lime juice in 2 cup measuring cup. Place chicken breast slices in plastic bag and add 1/2 of Peanut Sauce mixture to bag. Squish chicken in bag until all pieces are coated with sauce. Marinate chicken for 1-2 hours. Pour remaining cup of mixture into small saucepan.
- Preheat grill to medium heat. Thread chicken onto skewers, discarding used marinade. Grill satays 3-4 minutes on each side or until cooked through.
- While satays are grilling, bring peanut sauce mixture to a boil. Cook 3-4 minutes or until thickened. Serve peanut sauce on side for dipping. Sprinkle cooked satays with chopped cilantro and serve with lime wedges, if desired.
