A Taste of Thai Spicy Peanut Bake kicks this flavorful vegetable up a notch. It would make a great Thanksgiving side dish.
Ingredients
- 3 lbs butternut squash, peeled, seeded and cut into 1" cubes
- 1 large sweet onion, cut into 1" pieces
- 3 tablespoons oil
- 1-3.5 oz box A Taste of Thai Spicy Peanut Bake
- 1/2 cup chopped fresh basil
Directions
- Preheat oven to 450°F. Line a large baking sheet with foil or parchment.
- Add squash, onion and oil to a large bowl. Toss until coated.
- Add Spicy Peanut Bake (both inner envelopes) and mix until all ingredients are coated. Spread vegetables on baking sheet in a single layer.
- Roast until squash is soft, about 30 minutes. Toss with basil and serve.
