Broccoli Raab and Garlic Basil Coconut Rice

Ingredients
- 1-6.7 oz box Garlic Basil Coconut Rice
- 3 tablespoons olive oil
- 1 red bell pepper, julienned
- 1/2 red onion chopped
- 2 tablespoons chopped garlic
- 1 bunch broccoli raab, rinsed, stems cut off
- 6 plum tomatoes, quartered
- 2 tablespoons Garlic Chili Pepper Sauce
- Salt and pepper
- 1/4 cup grated Romano cheese
Directions
- Prepare Garlic Basil Coconut Rice as directed on box. Set aside to keep warm.
- Heat oil in large skillet.
- Add red bell pepper, onion and garlic. Stir fry until peppers begin to soften, about 2 minutes.
- Add broccoli raab and tomatoes. Stir fry until tomatoes begin to soften, about 2 - 3 minutes.
- Stir in Garlic Chili Pepper Sauce. Salt and pepper to taste.
- Place Garlic Basil Rice on platter.
- Arrange broccoli raab mixture over top.
- Sprinkle with Romano cheese. Serve warm.
