Chicken with Sweet Citrus Marinade

The heat of the grill caramelizes the molasses in this flavor-filled marinade for a slightly blackened yet tender chicken. Garlic Chili Pepper Sauce gives a balanced heat with these deliciously contrasting flavors!

Ingredients

  • 1 cup molasses
  • 1/4 cup soy sauce
  • 1/4 cup Garlic Chili Pepper Sauce
  • 2 tablespoons Fish Sauce
  • 2 tablespoons lime juice
  • 2 lbs boneless, skinless chicken thighs
  • Optional: Chopped cilantro

Directions

  1. Whisk molasses, soy sauce, Garlic Chili Pepper Sauce, Fish Sauce and lime juice in a bowl until mixed.
  2. Place thighs in a size appropriate dish so they fit snugly but do not overlap. Pour half the marinade over chicken reserving other half for dipping. Make sure all pieces are soaked with marinade and marinate 30 minutes to one hour.
  3. Preheat grill to a medium temperature. Try to keep the temperature around 350°F, as the molasses in the marinade will burn. Oil grates and grill chicken 5 minutes on each side, with cover closed, or until done (juices run clear). Drizzle with reserved marinade and serve. Sprinkle with cilantro if desired.
