Ingredients
- 1 tablespoon olive oil
- 1 onion, sliced thin
- 6 cloves garlic
- 1 cup uncooked lentils, rinsed
- 2 cups water
- Juice of 1/2 lemon
- 1/4 cup Garlic Chili Pepper Sauce
- 2-14 oz cans vegetable broth
- Salt and pepper
- Optional garnish: chopped parsley or cilantro
- *use one can broth for a dryer lentil and 2 cans for a soup-like lentil entrée
Directions
- In skillet, heat olive oil over medium heat.
- Sauté onion and garlic until tender, about 5 minutes.
- Add lentils, water, lemon juice and Garlic Chili Pepper Sauce.
- Cook over medium low heat, adding vegetable broth as needed until lentils are tender, about 30 minutes.
- Salt and pepper to taste. Serve with chopped parsley or cilantro to garnish.
