Makes 12 biscuits
These spicy biscuits have an Indian flair. The A Taste of Thai Coconut Milk makes them light as a feather.
Ingredients
- 2 1/2 cups all purpose flour
- 1 tablespoon and 1 teaspoon Madras curry powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small pieces
- 1 cup Coconut Milk
Directions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Combine flour, curry powder, baking powder and salt in a food processor fitted with a metal blade. Pulse until mixed. Add butter and pulse until flour has the texture of fine meal.
- Add Coconut Milk and pulse until dough forms a ball. Turn dough out onto a lightly floured counter and knead until smooth. Flatten down and roll out to a 1/2" thickness. Cut with a 2" circle cutter.
- Place on baking sheet and bake for 12 to 14 minutes or until firm and bottoms are golden. Serve warm.
