Orange juice added to our A Taste of Thai Peanut Sauce Mix makes a heavenly combination of spicy and sweet. This one pot dinner takes less than 15 minutes to assemble, but tastes like you’ve been in the kitchen all day.
Ingredients
- 1-3.5 oz box Peanut Sauce Mix or Spicy Peanut Bake, both inner envelopes
- 1/2 cup orange juice
- 2 tablespoons Garlic Chili Pepper Sauce
- 1 medium onion, sliced into 1/4" rounds
- 3 yams, washed and sliced into 1/4" rounds
- 2 tablespoons oil, divided
- Salt and pepper
- 2 1/2 - 3 lbs (about 8-10 pieces) boneless, skinlesss chicken thighs
- Chopped cilantro or basil
Directions
- Pour 1 inner envelope Peanut Sauce Mix, orange juice and Garlic Chili Pepper Sauce into crock pot. Mix well.
- Layer with onion slices and then with yams. Brush yams with 1 tablespoon oil. Salt and pepper to taste. Top vegetables with chicken and brush with remaining tablespoon oil. Lightly salt and pepper.
- Sprinkle thighs with second inner envelope of Peanut Sauce Mix. Cover with lid and cook 4 hours on high or 6-7 hours on low.
- Serve chicken with accumulated juices. Garnish with a sprinkle of cilantro or basil.
