Crock Pot Peanut Satay Chicken

A jar of Peanut Satay Sauce, cream cheese and lime will transform your chicken. The best part is, it cooks while you’re doing something else.
Ingredients
- 1 lb small red potatoes, halved
- 1 cup chopped onion
- 2 1/2-3 lbs boneless, skinless chicken thighs
- Salt and pepper
- 1/2-8 oz package (4 oz) cream cheese, room temperature (regular or 1/3 less fat)
- 1-7 fl oz jar Peanut Satay Sauce
- 3 tablespoons lime juice
- Optional: Chopped peanuts and cilantro
Directions
- Fill bottom of crock pot with potatoes and layer with onions. Top onions with chicken. Salt and pepper to taste.
- Beat cheese and Peanut Satay Sauce in a medium bowl until combined. Add lime juice to empty jar and cover. Shake until sauce (left on jar sides) and lime juice are mixed. Pour into peanut satay mixture.
- Beat mixture until smooth and pour over chicken. Cover and cook on high for 5 hours. Serve with chopped peanuts and cilantro, if desired.
