Red Curry Paste gives this comforting lamb stew a jumpstart that will have your taste buds dancing.
Ingredients
- 4 tablespoons vegetable oil, divided
- 2 lbs lamb stew meat
- Salt
- 1 large yellow onion, cut into chunks
- 2 cups chopped fennel
- 2 cups baby carrots
- 2 tablespoons chopped garlic
- 1-1.75 oz box Red Curry Paste
- 2-10 oz cans beef broth
- 2 bay leaves
- 2 tablespoons tomato paste
- 2 cups golden raisins
- Jasmine Rice, cooked
- 1 bunch scallions, chopped
Directions
- In a large pot, heat 2 tablespoons vegetable oil over medium-high heat.
- Lightly season meat with salt.
- Brown lamb well, in small batches.
- Add onion, fennel, carrots, garlic and Red Curry Paste to pot. Sauté all together for about 5 minutes, stirring constantly, adding remaining oil if needed.
- Add beef broth, bay leaves and tomato paste. Bring to a boil.
- Cover and simmer on low until meat is very tender, about 1 hour.
- Add golden raisins and scallions. Cook an additional 5 minutes.
- Serve hot over Jasmine Rice.
