1-3.5 oz box Spicy Peanut Bake, both inner envelopes
1 tablespoon canola oil
2 shallots, minced
1 cup chicken broth
Garnish: lime wedges, chopped cilantro
Directions
Preheat oven to 350°F.
Pound chicken to an even thickness between wax paper.
Coat both sides of chicken with Spicy Peanut Bake. Roll up and secure with a toothpick.
In a medium nonstick skillet, heat oil. Brown chicken rolls well on all sides. Place in a size appropriate baking dish.
Add chicken broth and shallots to the skillet. Bring to a boil, scraping up the browned bits in the pan. Simmer for 4 minutes or until slightly thickened.
Pour over chicken and bake for 30 minutes or until done.
Garnish with lime wedges and chopped cilantro.
