This delicious herb and lemon flavored rice has a bit of heat from A Taste of Thai Garlic Chili Pepper Sauce. It makes a great side or vegetarian dish.
Ingredients
- 3 cups cooked A Taste of Thai Jasmine Rice, set aside keeping warm
- 2 tablespoons olive oil
- 1 bunch scallions, chopped
- 1 cup frozen peas, thawed
- 1/2 pound feta cheese, crumbled
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- Zest from 1 large lemon
- 2 tablespoons A Taste of Thai Garlic Chili Pepper Sauce
- 1-2 tablespoons lemon juice
- 1 teaspoon sugar
- 1/2 teaspoon salt
Directions
- In a large skillet, heat oil.
- Add scallions and cook 1-2 minutes. Turn off heat.
- Add reserved rice, peas, feta cheese, basil, parsley, lemon zest, A Taste of Thai Garlic Chili Pepper Sauce, lemon juice, sugar and salt to skillet. Mix well and serve.
