Jasmine Rice with Feta and Green Peas

This delicious herb and lemon flavored rice has a bit of heat from A Taste of Thai Garlic Chili Pepper Sauce. It makes a great side or vegetarian dish.

Ingredients

  • 3 cups cooked A Taste of Thai Jasmine Rice, set aside keeping warm
  • 2 tablespoons olive oil
  • 1 bunch scallions, chopped
  • 1 cup frozen peas, thawed
  • 1/2 pound feta cheese, crumbled
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • Zest from 1 large lemon
  • 2 tablespoons A Taste of Thai Garlic Chili Pepper Sauce
  • 1-2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Directions

  1. In a large skillet, heat oil.
  2. Add scallions and cook 1-2 minutes. Turn off heat.
  3. Add reserved rice, peas, feta cheese, basil, parsley, lemon zest, A Taste of Thai Garlic Chili Pepper Sauce, lemon juice, sugar and salt to skillet. Mix well and serve.
