Peanut Satay Rice

Our Peanut Satay Sauce is not just for dipping.

Ingredients

  • 2 tablespoons oil
  • 1 cup chopped onions
  • 3 cups favorite vegetables, diced
  • 1 tablespoon Fish Sauce
  • 2 cups cooked chicken, cubed
  • 3 cups cooked Jasmine Rice* (day old)
  • 1-7 fl oz jar Peanut Satay Sauce
  • 2 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • *1 cup uncooked Jasmine Rice equals 3 cups cooked

Directions

  1. Heat oil in large skillet over a medium high heat. Add onions and stir-fry until almost cooked.
  2. Add vegetables and Fish Sauce. Stir-fry until tender-crisp.
  3. Add chicken, Rice and Peanut Satay Sauce. Add lime juice to empty jar and cover. Shake until sauce (left on jar sides) and lime juice are combined. Pour into skillet.
  4. Stir-fry until all ingredients are heated through. Mix in cilantro and serve.
