A Taste of Thai Peanut Sauce Mix combines with orange juice for a deliciously sweet pork and apple entrée.
Ingredients
- 1/2-16 oz bag (8 oz) A Taste of Thai Rice Noodles, any width
- 1-3.5 oz box A Taste of Thai Peanut Sauce Mix
- 1 1/2 cups orange juice
- 2 tablespoons canola oil, divided
- 1 large red onion, cut into thin crescents
- 1 1/4 lbs lean pork loin, thinly sliced
- 2 red bell peppers, julienned
- 2 green apples, cored, sliced into 1/4" slices
- 1 bunch scallions, sliced into 1" diagonal
Directions
- Put a large pot of salted water on to boil.
- In a medium saucepan, combine Peanut Sauce Mix (both inner envelopes) and orange juice. Bring to a boil, stirring frequently. Reduce heat and cook 3-4 minutes until thickened. Set aside.
- In a large nonstick skillet, heat 1 1/2 tablespoons oil over medium-high heat. Stir-fry onions and red peppers until onions begin to wilt.
- Add pork and stir-fry until no longer pink. Add apples and scallions and cook 2 minutes more.
- Prepare Rice Noodles according to directions on bag for pasta. Drain and rinse quickly. Toss noodles with remaining 1/2 tablespoon of oil and pour onto a serving platter.
- Add reserved orange peanut sauce to pork mixture. Stir together and bring to a simmer. Serve over noodles.
