Pork Peanut Satay Stir-Fry

Spicy and sweet Peanut Satay Sauce makes a great stir-fry.  It’s a one-skillet meal with a side of Jasmine Rice for authenticity.

Ingredients

  • 2 tablespoons oil
  • 1 cup sliced onion
  • 1 1/4 lbs pork loin, thinly sliced
  • 1 tablespoon Fish Sauce
  • 3 cups favorite vegetables*, chopped
  • 1-7 fl oz jar Peanut Satay Sauce
  • 2 tablespoons lime juice
  • Optional: Chopped cilantro and cooked Jasmine Rice
  • *We used baby corn with red peppers and sugar snap peas.

Directions

  1. Heat oil in large skillet over a medium high heat. Add onions and stir-fry until almost cooked.
  2. Add pork and Fish Sauce. Stir-fry until pork is just tender. Transfer from skillet to plate, keeping pan juices in skillet.
  3. Add vegetables to skillet and stir-fry until tender crisp. Add pork, onions (with accumulated juices) and Peanut Satay Sauce to skillet.
  4. Add lime juice to empty jar and cover. Shake until sauce (left on jar sides) and lime juice are combined. Pour into skillet.
  5. Mix well and cook until heated through (don't overcook, as pork will get tough). Serve with chopped cilantro and a side of Jasmine Rice if desired.
