Red Curry BBQ Short Ribs

These yummy beef ribs fall off the bone. Red Curry gives them a zing that will thrill all!

Ingredients

  • 4 lbs bone-in beef short ribs, English cut
  • 2 tablespoons Fish Sauce
  • 2 tablespoons cream sherry
  • 1 tablespoon each, minced garlic and ginger
  • 1-1.75 oz box Red Curry Paste
  • 1/2 cup dark brown sugar

Directions

  1. Pat short ribs dry and place in a size appropriate baking dish. They should be snug without overlapping.
  2. Add Fish Sauce, sherry, garlic, ginger, Red Curry Paste and brown sugar to blender (in order as listed). Blend to a smooth paste (wet rub). Pour or spoon rub over ribs and massage into meat on all sides. Cover and refrigerate a minimum of 2 hours to overnight.
  3. Remove baking dish from refrigerator and preheat oven to 300°F. Fill bottom of baking dish with 1/8 inch of water. Bake with cover for 2 1/2 hours.
  4. Preheat grill to medium heat and oil grates. Basting with mixture left in baking dish, grill ribs 5 minutes per side or until ribs have nice grill lines. Serve immediately. If desired, serve with Cilantro Sauce.
