Red Curry Paste gives this meatloaf a spicy kick. You may never make a plain meatloaf again.
Ingredients
- 1-1.75 oz box A Taste of Thai Red Curry Paste
- 1 1/2 teaspoons salt
- 1 teaspoon garlic powder
- 1/2 teaspoon fresh cracked pepper
- 1 1/2 lbs ground chuck
- 1 lb ground sirloin
- 1 cup chopped onion
- 1/2 cup chopped carrot
- 1/2 cup garlic herb bread crumbs
- Glaze
- 1/2 cup ketchup
- 2 tablespoons dark brown sugar
- 1 tablespoon A Taste of Thai Garlic Chili Pepper Sauce
Directions
- Preheat oven to 350°F. Oil a 9 X 13 inch baking dish.
- Add Red Curry Paste, egg, salt, garlic powder and pepper to a large bowl. Whisk until curry is completely dissolved. Break pieces of ground chuck and sirloin into bowl.
- Add onion and carrot to a food processor fitted with a metal blade. Pulse until just minced. Add to meat mixture along with bread crumbs. Mix with fork until ingredients are completely incorporated.
- Press together and place in baking dish. Shape into a 9 inch long by 4 inch wide loaf.
- In a small bowl, mix ketchup, brown sugar and Garlic Chili Pepper Sauce until sugar is dissolved. Pour glaze over meatloaf.
- Bake for 1 hour and 20 minutes or until internal temperature is 160°F on a meat thermometer. Let rest 10 minutes before serving.
