Red Curry Paste gives this meatloaf a spicy kick. You may never make a plain meatloaf again.

Ingredients

  • 1-1.75 oz box A Taste of Thai Red Curry Paste
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon fresh cracked pepper
  • 1 1/2 lbs ground chuck
  • 1 lb ground sirloin
  • 1 cup chopped onion
  • 1/2 cup chopped carrot
  • 1/2 cup garlic herb bread crumbs
  • Glaze
  • 1/2 cup ketchup
  • 2 tablespoons dark brown sugar
  • 1 tablespoon A Taste of Thai Garlic Chili Pepper Sauce

Directions

  1. Preheat oven to 350°F. Oil a 9 X 13 inch baking dish.
  2. Add Red Curry Paste, egg, salt, garlic powder and pepper to a large bowl. Whisk until curry is completely dissolved. Break pieces of ground chuck and sirloin into bowl.
  3. Add onion and carrot to a food processor fitted with a metal blade. Pulse until just minced. Add to meat mixture along with bread crumbs. Mix with fork until ingredients are completely incorporated.
  4. Press together and place in baking dish. Shape into a 9 inch long by 4 inch wide loaf.
  5. In a small bowl, mix ketchup, brown sugar and Garlic Chili Pepper Sauce until sugar is dissolved. Pour glaze over meatloaf.
  6. Bake for 1 hour and 20 minutes or until internal temperature is 160°F on a meat thermometer. Let rest 10 minutes before serving.
