A Taste of Thai Sweet Chili Sauce combined with Fish Sauce give this dish a true Thai flavor. You can mix and match your vegetables.
Ingredients
- 1/2-16 oz bag (8 oz) Rice Noodles, any size
- 1 tablespoon oil
- 1 1/4 lbs ground turkey
- 1 bunch scallions, sliced into small rounds
- 1 tablespoon Fish Sauce
- 1/2 English cucumber, cut into thin half moons
- 1 small head of radicchio, cut into thin strips
- 1-7 oz bottle Sweet Chili Sauce
- 1/4 cup finely chopped cilantro
- 3 tablespoons fresh lime juice
Directions
- Put a large pot of salted water on to boil.
- In a large nonstick skillet, heat oil over a medium high heat.
- Add turkey, scallions and Fish Sauce. Stir-fry until the turkey is cooked through and broken up.
- Meanwhile, boil Rice Noodles according to bag directions. Noodles are done when they are firm yet tender. Drain noodles, rinsing quickly with lukewarm water.
- In a large bowl, combine turkey mixture, cucumber, radicchio, Sweet Chili Sauce, cilantro, lime juice and noodles.
- Mix well and serve.
