This beautiful salad is a refreshing change from mayonnaise salads. Spicy Peanut Bake and Sweet Chili Sauce give it a unique Thai flavor.
Ingredients
- 1/2-3.5 oz box Spicy Peanut Bake
- 1/2 cup Sweet Chili Sauce
- 1/4 cup rice vinegar
- 3 cups shredded chicken breast*
- 2 cups green cabbage, very thinly sliced
- 2 carrots, julliened
- 1 bunch scallions, chopped
- 1 cup snow peas, sliced
- 1/4 cup chopped mint
- Optional: chopped peanuts
- * Use one store-bought rotisserie chicken for fast and flavorful chicken breast. It equals approximately 3 cups chicken breast.
Directions
- Mix 1 inner envelope of Spicy Peanut Bake, Sweet Chili Sauce and vinegar until sugar (in Spicy Peanut Bake) is dissolved. Set aside.
- Add chicken breast, cabbage, carrots, scallions, snow peas, and mint to a large bowl.
- Pour reserved dressing into chicken mixture and toss until combined. Top with peanuts if desired and serve.
