Our Peanut Sauce Mix and Coconut Milk dressing is a nice change from mayonnaise dressed potato salads.
Ingredients
- 1-13.5 oz can Coconut Milk
- 1-3.5 oz box Peanut Sauce Mix
- 1-2 teaspoons Fish Sauce
- 8 cups boiled potatoes, peeled (or not) cut into chunks
- 1 cup diced red onion
- 1 cup diced celery
- Salt and pepper
- Garnish: sliced scallions or chopped cilantro
Directions
- Add Coconut Milk, Peanut Sauce Mix and Fish Sauce to a small saucepan. Stirring, bring to a boil. Simmer 2-4 minutes or until slightly thickened. Remove from heat and cool.
- Add potatoes, onion and celery to a mixing bowl. Add cooled peanut sauce dressing and mix until combined. Salt and pepper to taste. Chill 1-2 hours. Garnish with sliced scallions or cilantro.
