Yellow Rice and Spinach Stuffed Flounder

Sweet currants complement the aromatic heat of Yellow Curry Rice and Garlic Chili Pepper Sauce in this stuffed fish. It’s an easy recipe for an elegant entrée.

Ingredients

  • 1-7 oz box A Taste of Thai Yellow Curry Rice, prepared
  • 2 tablespoons vegetable oil
  • 1 medium red bell pepper, diced
  • 1 teaspoon chopped fresh ginger
  • 1-10 oz package frozen spinach, thawed and squeezed dry
  • 1/4 cup currants
  • 2 tablespoons A Taste of Thai Garlic Chili Pepper Sauce
  • 8 flounder fillets
  • 1 lime
  • 2 tablespoons butter

Directions

  1. Preheat oven to 375°F. Grease bottom of baking dish.
  2. In large skillet, heat oil over medium high heat.
  3. Add red bell pepper and stir-fry for about 1 minute.
  4. Add ginger and stir-fry for an additional minute.
  5. Add spinach and mix until incorporated. Remove from heat.
  6. Add currants, Garlic Chili Pepper Sauce and rice to skillet. Mix well.
  7. Divide stuffing evenly among fillets and roll up. Place seam side down in dish. Reserve extra stuffing to serve along side fish.
  8. Squeeze lime juice evenly on top of fish fillets. Dot with butter.
  9. Bake until fish is cooked through, about 15 minutes.
