This is Thailand’s grilled street food at its best! Peanut Sauce Mix and Fish Sauce make these tasty satays extra delicious.
Ingredients
- 1-3.5 oz box Peanut Sauce Mix
- 1-13.5 oz can Coconut Milk
- 1 tablespoon Fish Sauce
- 1 tablespoon fresh lime juice
- 1 1/2 lbs boneless, skinless chicken breast, sliced thinly
- Optional: chopped cilantro, lime wedges and chopped peanuts
Directions
- Soak skewers in water for 1-2 hours before grilling.
- Whisk Peanut Sauce Mix, Coconut Milk, Fish Sauce and lime juice in a bowl. Pour 1 cup of Peanut Sauce mixture into a small saucepan and set aside. Place chicken slices into plastic bag and add remaining Peanut Sauce mixture. Squish chicken in bag until all pieces are coated with sauce. Marinate 1-2 hours in refrigerator.
- Just before grilling, bring reserved peanut sauce to a boil, stirring occasionally. Turn down and simmer 2-3 minutes or until slightly thickened. Set aside
- Preheat grill to medium-high. Thread chicken onto skewers, discarding chicken marinade. Prior to grilling, rub grill racks with oil for carefree turning of chicken. Grill satays 3-4 minutes on each side or until cooked through.
- Serve cooked satays with a side of warmed peanut sauce, chopped cilantro, lime wedges and chopped peanuts for the quintessential Thai experience.
