Spicy Peanut Bake packs these nutritious chips with sweet, spicy and savory flavors. It’s impossible to eat just one … but why worry? Kale is a super food!

Ingredients

  • 1.25 lbs (bunch) of curly leafed Kale
  • 4 teaspoons olive oil
  • 1-3.5 oz box Spicy Peanut Bake
  • Garlic salt

Directions

  1. Adjust oven racks to lower and top third of oven. Preheat oven to 300°F. Line 2 large baking trays with parchment. Do not use insulated trays.
  2. Tear kale into large bite size pieces removing thick stems and ribs. Wash and thoroughly dry kale pieces with paper towels. A lettuce spinner is the easiest tool for this step. Beware! If kale is wet, it will steam rather than dry out and get crisp.
  3. Add kale to a large bowl and toss with olive oil, massaging with hands until every piece of kale is coated. Sprinkle with Spicy Peanut Bake, a bit at a time until all leaves are coated with some peanut mixture. Divide kale evenly between trays, being careful that leaves do not overlap one another. Sprinkle lightly with garlic salt.
  4. Bake for 15 minutes and switch trays from top to bottom, reversing from front to back for even baking. Bake an additional 15 minutes. Remove trays to a wire rack and cool a few minutes to crisp* up before serving. If chips do not disappear immediately, store in a zip lock type of bag (when totally cooled) for 3-5 days.
