Coconut Lime Peanut Marinade

This makes enough marinade for 4 pounds (1800g) of chicken, pork or shrimp. For maximum flavor, marinate the meat in the morning and grill or bake that night.


  • 1 tablespoon finely minced ginger
  • 1-3.5 oz box Peanut Sauce Mix, both inner envelopes
  • 1-13.5 oz can Coconut Milk
  • 1/4 cup fresh squeezed lime juice
  • 1 grated rind of one lime
  • 1/4 cup brown sugar
  • 1 cup sweetened coconut flakes
  • 4 large cloves garlic, finely minced


  1. In a bowl, whisk all ingredients together until well mixed.
  2. Pour over chicken, pork or shrimp, turning to coat on all sides. Marinate 2 hours or more.
  3. Grill or bake.
  4. Boil any unused marinade for 5 minutes or more. Serve on the side for a dipping sauce.
