Coconut Milk Fruit Dip

Serve a dollop of this creamy coconut dip on pie or use as a dipping sauce for fruit.
Ingredients
- 1-13.5 oz can chilled* Coconut Milk (not lite)
- 1 cup cool whip
- 2 tablespoons confectioners sugar
- 1/4 teaspoon coconut extract
- *Chill can of Coconut Milk (upside down) in refrigerator overnight, so coconut solids and water will separate.
Directions
- Remove can of Coconut Milk from refrigerator and carefully remove top from can (so ingredients stay separated). Pour off coconut milk water and scoop coconut milk solids into a small bowl.
- Add cool whip, sugar and coconut extract. Whisk until smooth. Cover and refrigerate, if not using right away.
