*Chill can of Coconut Milk (upside down) in refrigerator overnight, so coconut solids and water will separate.
Directions
Remove can of Coconut Milk from refrigerator and carefully remove top from can (so ingredients stay separated). Pour off coconut milk water and scoop coconut milk solids into a small bowl.
Add cool whip, sugar and coconut extract. Whisk until smooth. Cover and refrigerate, if not using right away.
