Note: This makes enough marinade for 4 lbs of meat.
Directions
In a bowl, whisk Coconut Milk, Peanut Sauce Mix (both inner envelopes) basil, brown sugar, lemon juice, lemon rind, ginger and garlic until well mixed.
Pour over meat, chicken or shrimp, turning to coat on all sides. Marinate at least 2 hours.
Grill or bake.
Boil leftover marinade for 5 minutes and use as a dipping sauce.
