Curried Avocado and White Bean Dip

Green Curry Paste gives this yummy dip a real kick.

Ingredients

  • 2 -3 tablespoons fresh squeezed lime juice
  • 1 tablespoon A Taste of Thai Green Curry Paste
  • 2 teaspoons A Taste of Thai Fish Sauce
  • 3 ripe Hass avocados, peeled and pitted
  • 1-15 oz can cannellini beans, drained and rinsed
  • 1/3 cup olive oil
  • 4 tablespoons chopped cilantro, divided
  • Pita bread or tortilla chips

Directions

  1. In a small bowl, whisk lime juice, Green Curry Paste and Fish Sauce until curry is completely dissolved.
  2. Add curry mixture, avocados, cannellini beans, olive oil and 3 tablespoons of cilantro to a food processor fitted with a metal blade. Purée until smooth.
  3. Spoon mixture into a bowl and garnish with remaining tablespoon of cilantro. Serve with pita bread or tortilla chips.
