Garlic Chili Corn Salad

This salad is a crowd pleaser! It combines the smokiness of the grill and the heat of Garlic Chili Pepper Sauce, with salty feta cheese.  Grill extra corn just so you have leftovers to make this fabulous summer salad anytime!

Ingredients

  • 4 ears corn, shucked, oiled and grilled
  • 1 large red bell pepper, small dice (about 1 1/2 cups)
  • 1/2 English cucumber, small dice (about 1 cup)
  • 1 cup feta cheese crumbled
  • 3 tablespoons lime juice
  • 2 tablespoons Garlic Chili Pepper Sauce
  • 1-2 teaspoons honey
  • 1 teaspoon salt
  • Fresh cracked pepper
  • 1/4 cup fresh chopped cilantro or basil, or a mixture of the two

Directions

  1. Grill corn until nicely browned on all sides. When cool enough to handle cut off kernels and reserve. You will have approximately 3 cups. Cool in refrigerator.
  2. While corn is cooling prep veggies. Add bell pepper, cucumber and feta cheese to a medium bowl.
  3. In a small bowl, whisk lime juice, Garlic Chili Pepper Sauce, honey, salt, and pepper to taste until well combined. Pour over veggies and add cilantro or basil and reserved corn. Mix well and serve.
