Green tea powder (matcha) and Coconut Milk make a sweet and slightly savory ice cream that’s sure to please. It’s ultra-creamy and is the perfect ending to any Asian meal.
Ingredients
- 1 tablespoon green tea powder (matcha)
- 3 tablespoons hot water
- 3 large egg yolks
- 2/3 cup sugar
- 1-13.5 oz can Coconut Milk (not Lite) divided
- 1/4 teaspoon coconut extract
Directions
- In a small bowl, slowly whisk green tea powder into hot water until dissolved. Set aside.
- Add egg yolks, sugar and 1/2 can Coconut Milk to a heavy-bottomed, medium-sized saucepan. Whisk until well mixed. Cook over a medium heat, stirring constantly.
- When mixture is thickened, remove pan from heat. Add reserved green tea, remaining Coconut Milk and coconut extract to saucepan. Stir well and pour into a shallow bowl. Cover and refrigerate until chilled.
- Pour cold Coconut Milk mixture into frozen insert of ice cream maker. Follow instructions for ice cream maker.
