Pad Thai Salad with Chicken

Our Pad Thai for Two also makes a great salad with all the flavors of Thailand.  It’s a perfect dish for leftover meats, poultry or seafood.


  • 1-9 oz box Pad Thai for Two (includes Pad Thai Sauce and Rice Noodles)
  • 2 tablespoons ketchup
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 2 cups favorite vegetables*
  • 2 cups cooked chicken
  • 1/2 cup peanuts crushed
  • Optional: 1/4 cup chopped basil
  • *We used chopped scallions and broccoli slaw


  1. Put a large pot of salted water on to boil.
  2. Meanwhile, whisk Pad Thai Sauce, ketchup, lime juice and brown sugar in a medium bowl until combined. Add vegetables, chicken and peanuts.
  3. Boil Noodles according to box directions and drain. Rinse quickly with cold water and add to bowl. Toss until all ingredients are combined.
  4. Sprinkle with basil, if desired, and serve at room temperature or chilled.
