Coconut Raisin Rice Pudding

Ingredients

  • 2 cups cooked Jasmine Rice
  • 1-13.5 oz can Coconut Milk
  • 1/2 cup raisins
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • Ground nutmeg

Directions

  1. Add Jasmine Rice, Coconut Milk, raisins, sugar, and salt to a medium saucepan. Bring to a boil and cook over medium heat, stirring until combined. Cook about 3 minutes.
  2. Beat egg with one-tablespoon water. Stirring constantly, slowly add in a thin stream to rice mixture. Stirring, cook for 2-3 minutes and add extract. Mix well and pour into dish. Sprinkle with nutmeg. Serve warm or cold.
