These delicate bites of salmon are extra yummy when dipped in our Peanut Lime Sauce.
Ingredients
- 1 1/2 lbs skinless salmon fillet (thick end) cut into 3/4" cubes
- 1 tablespoon olive oil
- Salt and pepper
- 6 tablespoons sesame seeds (white and black* mixed)
- 1-13.5 oz can Coconut Milk
- 1-3.5 oz box Peanut Sauce Mix
- 3 tablespoons of fresh squeezed lime
- *Black sesame seeds can be found at Asian or health food stores.
Directions
- Preheat oven to 400°F. Line a baking sheet with foil or parchment.
- Add salmon and oil to a bowl. Toss to coat. Sprinkle salmon with salt and pepper.
- Place sesame seeds in a shallow bowl. Dip one side of salmon into seeds and place sesame side up on baking sheet.
- Bake salmon for 8-10 minutes or until just done, moist but cooked through.
- Meanwhile, add Coconut Milk and Peanut Sauce Mix (both inner envelopes) to saucepan. Stirring, bring to a boil and cook until thickened, about 4 minutes.
- Remove from heat and whisk in lime juice until combined. Serve salmon bites on a platter, with a bowl of Peanut Lime Sauce for dipping.
