- 6 slices thick cut bacon
- 1/2 cup minced shallots
- 1-14 oz can artichokes, drained and chopped
- 1-8 oz package of Neufchatel cream cheese
- 1-8 oz package grated 6 cheese Italian blend, divided
- 1/2 cup mayonnaise
- 1/4 cup Garlic Chili Pepper Sauce
- 1/2 cup chopped cilantro

Directions
- Preheat oven to 375°F. Grease pie plate. Fry bacon in a large skillet until crisp and drain on paper towels. Crumble or cut into small pieces and set aside.
- Drain all but one tablespoon of bacon grease from pan and add shallots. Sauté until lightly browned. Turn off heat and add chopped artichokes. Stir until mixed for added flavor.

- Bake 20-25 minutes or until slightly browned on edges. Remove from oven and sprinkle with cilantro. Serve with vegetables or crackers.
