This beautiful salad is not only pretty but good for you too. A Taste of Thai Garlic Chili Pepper Sauce gives it some heat to balance the sweet carrots.
Ingredients
- 2 tablespoons Garlic Chili Pepper Sauce
- 2 tablespoons dark brown sugar
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon Fish Sauce
- 2-10 oz packages matchstick carrots
- 1/2 cup roasted peanuts, coarsely chopped
- 1/4 cup chopped cilantro leaves
Directions
- Add Garlic Chili Pepper Sauce, sugar, oil, lime juice and Fish Sauce to a large bowl. Whisk until sugar dissolves.
- Add carrots, peanuts and cilantro. Toss to combine and serve.
